According to the TF2 wiki Blutsauger crits do 30 damage.  You also fire 10 needles a second.  If you were critting reliably you could kill a full health Heavy before he could spin up his minigun.  Even if you're not getting 10 crits in a row, you should kill the Heavy in around two seconds, maybe a tiny bit more.

A Kritzkreiged Blutsauger Medic will now be an absolute death machine. 

What's the extent of the Sandvich's buffs?  I read the thing but it seems like there's been a change to the eating time.  Is that true?

Nope, nom time is still the same length, it's just now you recover full health instead of 125 or something. Also, you can right click and throw your sammich on the ground (which shows up on a nice lil plate) and recovers 50% health to whoever picks it up (friend or foe). When you throw your sammich, you also lose it, but you can get a new one by picking up any medkit when at full health.

Just last night, I noticed that the flaregun mini-crits if the target is already on fire, shows just how long its been since I used it.

I was playing last night - all heavy boxing match.  Id get hurt a bit find some open space to heal and eat a sammich.  One time 1 or 2 guys came up to me while eating and I healed faster than they could punch me out.  Granted I was low once I finished, but it heals FAST and a lot.  I really think this makes heavies what valve actually wanted with the sandvich - a semi-viable solo (w/o medic at least) class

That might make me pull out the sandvich more.  Before it was a total gimmick not worth losing the shotgun over.
