I had a busy cooking weekend last week... finished it off Sunday by making my own enchilada sauce, which was surprisingly easy.  Then, of course, enchiladas.

For any of you who might not be able to have dairy, you might enjoy this recipe. It's actually really good, I just tried it today, and it works really well if you want to make caserole dishes that require cream soups you couldn't otherwise have. I got it from here and thought I'd share. I've just changed the writing around a bit so that it's ... nicer. I dunno.

Cream of Mushroom Soup

This recipe is for 1 cup of soup.

Firstly, microwave 1 1/4 Cups of regular, non-flavored soy milk. You want to microwave it for about three or so minutes so that it's good and hot.

While you're doing that, you should saute the following:

3 Tablespoons of margarine (dairy free, of course)
1/4 cup canned mushrooms, chopped (I used canned mushrooms and it wasn't bad, but I'd recommend fresh brown mushrooms 'cause they're awesome)
1 Tablespoon of chopped onions

Then, you'll want to whisk in the following:

3 Tablespoons of flour
1/4 Teaspoons salt
and a dash of pepper, as you like it.

"Cook over medium heat until bubbly, stirring constantly. While slowly adding in the hot soy milk, whisk until a thick creamy texture. This also thickens upon cooling, so take that into consideration for how thick you want it."

It's true... whisk that shit 'til you're ready to take it off and it'll be super nice and creamy. This recipe was amazing and was super easy to double (which I did). It's delicious, and a nice alternative to the canned cream of mushroom soups. It definitely has less salt and doesn't taste anywhere near as salty; this is a lot closer to what I've gotten in various restaurants.

This didn't take all that long to make at all, and I used it in a meat pie that I will be baking later this afternoon; I can only image how jawesome it's going to be in a casserole (which I'll try next time).

Hope that helps! If anyone has any other dairy free recipes that could be useful, please pass them on...
