I have a Motorola Backflip that I got from my cellphone carrier. Well I went to update it and noticed I can't because my carrier buys phones only out of the us. So I can't update it to Android 2.1! Does anyone know how I can update this phone to android 2.1?

You're locked into whatever OS your provider has deployed to your phone, unless you root it. Someone else can help you with the details though, since I haven't rooted my own android yet mostly because it's already running 2.2 ;x
