When the new update drops, the server will remain at the old version until updates are available for the server mods, and to make sure there aren't any major issues with notch's update. Here is how you revert to the old version after the update.
1. Update the client (open it and log in) and then close it once it has updated
2. find your .minecraft folder
  Windows -> Start>Run type %APPDATA% and press enter
  Mac -> /Users/{username}/Library/Application Support/Minecraft
  Linux -> home directory ~/.minecraft (usually /home/{username}/.minecraft)
3. find minecraft.jar in .minecraft/bin and rename it (Minecraft.jar is different than minecraft.jar)
4. Download the old minecraft.jar from here: minecraft.jar and put it in .minecraft/bin
5. Launch minecraft and you are now running the old version and will be able to connect to the server.
