I haven't finished it yet but The Witcher is pretty good so far.
I'd say it's worth checking out.

Knights of the Old Republic 1 and 2 are pretty fantastic, and while somewhat linear, have enough freedom so that it doesn't feel like such.

I loved what I played of the Witcher until it stopped letting me play.  All of Bioware's stuff is ok I guess, but my favourite game of theirs is Jade Empire actually.  It's far from their best game, but I fucking loved the setting and characters.

Non linear shit you probably would have to go older games, black isle and all that stuff.  I find those too clunky to play though.

You can't go wrong with Fallout one and two. But you probably already played them.

The Witcher owns, and Oblivion is quite good with the right mods.  Also Fallout, Arcanum, Mass Effect, Fable.

Download any custom modules for NWN? There are some decent ones out there.

Or make your own, the toolset is fun.

I've heard Fable 2 is alright, with an increidble ending. Might want to check that out? Also, you might want to try Earthbound or Mother 3. Gameplay wise, they are JRPGs, but there as far away from animu as you can get. Don't know if their your cup of tea though.

I second Monkey Island.

Also I played a little Fable II, it seemed like a lot of fun from what I saw.

While I'm of the opinion that all golden era Lucas Arts games, including Monkey Island 1/2, present more of an "epic adventure" than any RPG I have ever played, I have not found any non-japanese RPG (for here I will exclude games like A Link To the Past or FFII/FFIII) to thrill me as much as Morrowind. The first time in the Morrowind universe was like finding the Ultima 7 universe, or the D&D2 paper and pencil universe. Sadly, little has compared as well for me.

Sorry. But if you find something, let me know.

Hmm... most of my recommendations are over 10 years old.  I think that's past Dave's period of acceptability...

If you've played Fallout, then you can play Arcanum.
