Vintage Weapon = at least a scrap, maybe a polycount weapon
Paint = anywhere from 2 scrap to 2 reclaimed, depending on the color. White and Black are more exclusive than the rest
Tags = 1 to 2 reclaimed
Poly Weapon = ~1 reclaimed, but can go for more or less depending on supply and demand
Crates = sort of a wild card... 1 scrap is a base price, but it can jump if someone is in a key-buying mode
Hats:
Poly Hats = 1-3 other hats, depending on the person and the quality of the hats traded
Bill's Hat, Max's Head, Earbuds, and other sought after promotional hats will usually only be traded for multiple hats. People really, really want the exclusivity.
Vintage hats are generally worth more than non-vintage hats due to exclusivity, but exactly how much more is a thing of personal preference.
Crate hats, especially the Old Guadalajara and Napper's Respite are less valuable than most other hats because they are common. Some hats, such as the hatless ones, also fall into this category. You might get lucky trading one away, but most people aren't looking for them.
Shit hats: Alien Swarm hat, Ellis's Cap, Ghastly Gibbus. Not worth much more than a scrap. Make someone happier by giving them one of these for free.
Metal:
Metal is the big currency since trading came out. If you have metal, you can trade for pretty much anything.
Refined metal: used for trading for bulk items, a key, multiple paints or tags, or hats. People will trade a hat for anything from 1-3 refined depending on how much metal they want and what hat they are trading off.
Reclaimed metal: Paint, tag, and polycount weapon territory.
Scrap: ???
Those are the rough guidelines I follow, but they vary quite a bit depending on supply and demand.
