Just talked to her about the situation and it seems like she's ultimately ignoring anything I have to say to her. She won't believe me when I say that other people weren't making fun of her and accused me of "joining in on picking" on her. She refuses to say that she's taking it personally.

- Find a new place to live
- Put your old spot up as a sublet for whatever your rent is
- Contractually sign over your portion of the lease to them
While I don't know Arizona's laws, I believe every state is generally favorable to the tenant. It will cost you some money since likely you might be paying double rent share for a month or something, but if things fall through just get out, its never worth putting up with that kind of thing.

Just got a rejection email for an interview that I drove four hours today to get to. I wouldn't be annoyed if it hadn't sounded like an amazing entry level job, and I thought I did really well at the interview. I actually thought I might get a job out of college better than tier 1 helpdesk shit.
I'm getting really discouraged about weight loss. By all logic I should be on a deficit of 500 calories each day, but I'm not losing weight. I'm making sure to count my calories accurately, I'm being sure to stay under my limit, working out 3 times a week...but nothing.
I'm adding cardio in addition but if this doesn't help I'm considering going to a doctor because this makes no sense.

Already said and done. I only drink water and non-caffinated teas. I eat over 100g of lean protein a day. Keep fat less than 50g a day and the rest carbs. Don't get fast food either.
Somewhere in there, something must not be correct with the calories tracked.
Do you use a scale/weigh your portions?

Everyone assumes that somethings wrong when it comes to the portions, but I can assure you that's not true. I weight all my portions and keep them divided as such. I don't ever consume something and not record it unless it's water.
Just relax man. I know it sounds like bullshit but the weight on the scale is just a number. My weight fluctuates up to 15 pounds a day depending on whether I've been taking creatine, water weight, etc.
The best thing you can do for yourself is take pictures to compare your progress.
I dunno what your stats and goals are, but consider some progressive resistance training to aid in muscle hypertrophy. A sick pump is all you need to boost your self confidence, at least in my experience.
Honestly, it really takes a long time for your body to burn fat. You need to be looking at a monthly deficit, not a daily one. Also, be aware of the consequences of consuming a days worth of beer in 2 hours on a friday night.
tl;dr: You're probably fine, just impatient.

Second this, I wont be +/- 15...but like 3 LBS or so is a good floating range for me based on how much Ive eaten and drank in the last 48 hours and how much Ive exercised.

Has anyone read the thing about water retention? After a certain point actual weight loss becomes erratic because the body tends to retain water. Having a cheat meal usually makes the body shed this water.

cheat meals are stupid; eat the stuff you like normally, just less of it. Best way to lose water weight is to binge drink vodka; that hangover shred.
also, one thing to note, if you are doing hypertrophy work as a beginner, it's really easy to put on muscle mass. Even on a light deficit you can easily put on enough muscle to offset any fat loss; so you might not see a change in the scale, but you'll be a lot leaner.

Honestly the only consistent time to measure on a daily basis is when you wake up after you piss, and even then you are going to have some outliers. The only way that daily measurement works is if you collect the data over a large period of time (>month)

What is your type of weight lifting, how do you do it? Because (I'm sure you know), muscle weighs more than fat, and if your weight lifting methods build muscle MASS then you will actually end up going neck and neck for overall weight (in most people) compared to the fat
